Brisket of Beef Bouilli

  • 6-7 lbs beef brisket
  • Bunch of parsley
  • Bunch of thyme
  • 1 large onion, sliced
  • 1 head of celery, cut in small pieces
  • 1 dozen whole grains of allspice
  • 1 dozen whole grains of black pepper
  • 1 tsp salt
  • 3 carrots, peeled & cut in thick slices
  • 2 turnips, peeled & cut in pieces
  • 4 tomatoes, cut in pieces or 1/2 can tomatoes
  • Browned flour
Put the brisket in a stew pan and cover with cold water. When it simmers, skim and add the spices and vegetables. Simmer very slowly for 3 hours. When the meat is tender, take it out and lay it on a dish. Take out the stems of the parsley and thyme. Thicken the broth with browned flour and pour atop the meat. Serve.
