Breast of Partridge

  • 2 portions of breast from partridge
  • 2 slices of bacon
  • Salt and pepper
  • Toast
  • 3 cooked mushrooms
  • Butter
  • Julienne potatoes
Cut 2 portions of breast from a good-sized partridge. Roll each piece in 2 slices of bacon, season with pepper and salt, broil for approximately ten minutes, turning once only. When cooked, place on hot platter on slices of toast, add 3 cooked mushrooms to each serving, garnish with butter, serve proudly with julienne potatoes. Should always be served very hot, and with fresh watercress if possible. Each piece of breast serves 1.
