Breakfast Potatoes

  • 2 cups cold, boiled potatoes
  • 3 tablespoons pimentos
  • 2 tablespoons onion
  • 2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons parsley
  • 2 1/2 tablespoons melted butter
Dice the potatoes, and chop onion, pimentos, and parsley fine. Mix all together, turn into a hot frying pan, and spread evenly. Cook slowly until well browned underneath. Fold, and turn like an omelet.
