Breakfast Cake

  • 1 quart flour, sifted
  • 1 egg, beaten
  • Salt
  • 1 Tbsp butter
  • 2 tsps cream of tartar
  • 1 tsp baking soda, dissolved in 1 Tbsp hot water
  • 1 pint milk
Warm the milk. Stir the butter in when cool. Add the beaten egg, a little salt and flour with the cream of tartar sifted in it. Add the dissolved baking soda last.

Bake with love for about 20 minutes in flat, square tins. Mark the crust through with a knife. Break it up and serve hot.
