Breaded Chicken
- Chicken
- Egg, beaten
- Bread crumbs
- Pepper
- Salt
- Parsley, minced
- Butter
- 1/2 cup hot water
- 1 cup cream or milk
Prepare the chicken as for fricassee (see Fricassee Chicken recipe) by cutting them into pieces. Dip each piece in beaten egg, then in bread crumbs. Season with pepper, salt and a little minced parsley.
Place the pieces of chicken in a baking pan. Put on the top of each piece a lump of butter. Add the hot water. Bake slowly at 300 degrees F, basting often. When done, put on a platter.
Into the pan, pour the cream or milk and add a cup of bread crumbs. Stir well until cooked. Pour over the chicken.
Serve while hot.
