Bread Sauce for Poultry or Game

  • Giblets
  • 1 pint water
  • 3/4 lbs stale bread
  • 1 onion
  • 10 whole peppers
  • 1 blade mace
  • Salt
  • 2 Tbsps cream
Put the giblets in water. Add the onion, pepper, mace and salt. Allow to simmer for about an hour. Strain the liquor over the bread crumbs. Cover the stewpan and let it gently simmer for about an hour. Be careful not to allow it to boil. Beat the sauce up with a fork until it is nice and smooth. Allow it to boil for 5 minutes, stirring well until it is thick. Add cream. Serve hot.
