Bread Omelet, No.2

  • 4 ounces milk
  • 1 cup bread crumbs
  • 6 eggs
  • Pepper
  • Salt
  • Butter
Bring the milk to a boil and pour atop the bread crumbs. Let it stand for a few minutes (be patient, you rascal). Break the eggs into a bowl, stir (not beat) until well mixed. Add the milk and bread, season with pepper and salt and mix everything well together. Put the mixture into a hot frying pan containing a large spoonful of butter hot to the point of boiling. Fry the omelet slowly. When brown on the bottom, cut in squares and turn again. Fry to a delicate brown. Serve hot.

Cracker omelet may be made by using 3-4 rolled crackers in place of bread.
