Bread Cakes

  • 1 quart broken, stale bread
  • 3 eggs, beaten
  • Salt
  • 1 pint milk
  • Flour
Put the broken, stale bread in a bowl with enough cold water to cover it. Let it soak overnight.

When you awake the next day, strain the bread through a clean cloth and squeeze out all the water. Mash the bread in a bowl with the back of a wooden spoon. Add the beaten eggs, a little salt, milk and enough flour to make a batter.

Bake as buckwheat cakes.
