Brandy Sponge

  • 1 tablespoon gelatine
  • 1/4 cup cold water
  • 1 cup hot water
  • 1/2 cup sugar
  • 1/2 teaspoon caramel
  • 3 egg whites
  • 1/2 cup brandy
Soak gelatine in cold water and dissolve in the hot water. Add the sugar, caramel and brandy. Cool until mixture begins to thicken. Beat egg whites and fold into gelatine mixture. Fill molds and chill. Serve with whipped cream. Serves 6.
