Brandied Peaches

  • 1 lb peaches, pared
  • 1/2 lb sugar
  • White French brandy
Put the pared peaches in a preserving kettle. Cover with water and let it simmer until soft. Take out the peaches without any of the water and put it, closely packed, in the jars.

Put the dry sugar on top of the peaches and cover with the brandy.

Seal up the jars immediately.
