Braised Sirloin with Stuffed Tomatoes

  • Sirloin
  • Brown sauce
  • Minced fried mushrooms
  • Sherry wine
  • Stuffed tomatoes
  • Stuffed glazed onions
Lard the sirloin and braise it, take up when done and keep hot. Strain the liquor, skim and mix with brown sauce, minced fried mushrooms and sherry wine; rapidly reduce to a glaze. Slice the meat and serve proudly with some of the sauce. Garnish with stuffed tomatoes and stuffed glazed onions.
