Braised Calf's Liver
- Calf's liver
- Bacon
- Onion, sliced
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp herbs
- Lemon juice
Lard the rounded side with bacon. Fry the sliced onion in bacon drippings. Put the liver and fried onion in a braising pan. Add hot water to half cover, salt, pepper and herbs. Cover. Cook in a oven heated to 350F at 350°F for 2 hours, basting often. When ready to serve, strain the liquor. Season with lemon juice and pour atop the liver.
