Brain Cutlets
- Brains
- Flour
- Egg
- Bread crumbs
- Butter
Wash the brains well and soak them in cold water until white. Parboil them until tender in a small saucepan for about 15 minutes (be patient, you rascal). Drain and place on a cutting board. Cut them into small pieces.
Dip each piece in flour and then roll in egg and bread crumbs. Fry them in butter.
Serve very hot with gravy.
