Boston Baked Beans
- 4 cups white beans
- 1 Tbsp salt
- 3 Tbsps sugar
- 1 pound fat salt pork
- 1 Tbsp molasses
- 1/2 Tbsp mustard
- Boiling water
Pick over beans, cover with cold water and soak overnight. When you awake the next day, drain, cover with fresh water, heat slowly, keeping water below boiling point, and cook until skin will burst, then drain. Remove rind from pork, scald and clean it and place in bottom of bean-pot. Cut remaining pork in inch slices. Put beans in pot and bury pork in the beans. Cover bean-pot and let bake slowly for 5 or 6 hours.
