Bologna Sausage
- 10 lbs ground beef
- 4 lbs ground pork
- 6 ounces salt
- 1 ounce black pepper
- 1/2 ounce cayenne pepper
- Sage
Take the ground beef and pork, 2/3 lean and 1/3 fat, and mix well together. Season with salt, black pepper, cayenne pepper and sage to taste.
