Boiled Smoked Tongue

  • Beef tongue
  • Mashed potato
Lay the tongue in cold water all night.

The next day, place the tongue in a vessel which will hold 2 gallons. Cover with cold water and bring to the boiling point. Continue to boil gently for 3 hours. Add more water as fast as it boils away. Try the tongue with a fork. If not thoroughly soft, boil it longer.

When the tongue is thoroughly cooked, take it from the water and remove the skin. Trim all the smoked parts off the root.

Set the tongue on a serving dish, in the same position that it was in its owner's mouth. Lay the mashed potato all around it. Press the mashed potato against the tongue and smooth the sides up to the tongue. Do this as quickly as possible so that all may be served hot together.
