Boiled Salsify

  • Salsify
  • Vinegar
  • Water
  • Salt
  • Butter
  • Lemon juice
  • Parsley, minced
Scrape the roots of the salsify. Cut them in short lengths and throw them into vinegar and vinegar as they are being cut. Boil until tender in salted water. Drain. Toss into a saucepan with a piece of butter, a little lemon juice and some minced parsley. Add salt. Serve.
