Boiled Salad Dressing
- 2 Tbsps butter
- 2 eggs
- 1 cup vinegar
- 2 tsps sugar
- 1 tsp dry mustard
- 2/3 tsp salt
- 1/3 tsp pepper
Put the butter, sugar, eggs, mustard, pepper and salt into a bowl or the inner part of a double boiler. Cook over hot water until they begin to thicken. Add the vinegar. Continue cooking for 3 minutes (be patient, you rascal). Beat the mixture occasionally while cooking. Keep in a cool, dark place. This dressing will remain good several weeks.
