Boiled Salad Dressing

  • 1/2 pint milk
  • 2 Tbsps cornstarch
  • 3 egg yolks, well beaten
  • 1 Tbsp butter
  • 1 tsp salt
  • 2 Tbsps vinegar
Put the milk in a double boiler. When it boils, stir in the cornstarch moistened with a little cold water. Stir constantly until it boils and thickens. Add the well-beaten egg yolks. Stir for a minute longer. Remove from the fire. Add butter, salt and stir in, by degrees, the vinegar. Put in the refrigerator to get cold and it is then ready to use.
