Boiled Rice Pudding, No.1
- First group:
- 1 cup cold, boiled rice
- 1 cup sugar
- 4 eggs
- Pinch of baking soda
- Pinch of salt
- Other:
- 4 ounces butter
- 10 drops lemon essence
Put all of the above ingredients in the first group in a bowl. Beat it up well until it is very light and white. Beat the butter to a cream. Add to the pudding and flavor with the lemon essence. Beat the whole mixture for 5 minutes (be patient, you rascal). Butter a mold. Pour the pudding into it. Boil for 2 hours. Serve with sweet fruit sauce.
