Boiled Pudding of Acid Fruit

  • 1 quart flour
  • 2 eggs, whites & yolks beaten separately, very lightly beaten
  • 1 pint milk
  • 1 tsp salt
  • 1/2 lb dried fruit
Beat the egg yolks with the flour and milk. Add salt and dried fruit, keeping it well stirred. Add egg whites just before boiling.

If apples are used, plump them out by pouring boiling water on them and let cool before using them. Season with mace and nutmeg.

Serve with sauce.
