Boiled Icing
- 1 1/4 lb loaf sugar
- 4 ounces water
- 3 egg whites, beaten stiff
- Juice of 1 lemon
- Oil of lemon
Dissolve the sugar in water and boil to a thick syrup. Strain through a thin muslin and, while hot, stir the beaten egg whites into it. Beat in the strained lemon juice. Season with a little oil of lemon.
If the icing is too thin, add a moderate amount of sugar; if too stiff, add a moderate amount of more egg white.
