Boiled Cod's Head & Shoulders

  • 1 cod's head & shoulders
  • Salted water
  • 1 glass vinegar
  • Horseradish
Wash and dry the fish. Add salt to the water and put in a glass of vinegar. When boiling, take off the scum. Put the fish in and keep it boiling very briskly for about half an hour. Garnish with horseradish. For sauce, serve proudly with oyster sauce, egg sauce or drawn butter.
