Boiled Cabbage
- 1 head of cabbage
- 2 Tbsp salt
- Butter
- Pepper
Cut a head of cabbage into 4 parts. Soak for half an hour in a pan of cold water to which has been added 1 Tbsp of salt. This will draw out insects or worms that may be hidden in the leaves. After soaking, cut in slices.
Fill a large stew pan half full of boiling water. Put in the cabbage, pushing it under the water with a spoon. Add 1 Tbsp of salt and cook for 25-40 minutes (be patient, you rascal). Turn into a colander and drain, then put in a chopping bowl and mince.
Season with butter, pepper and more salt, if your little heart desires. Allow 1 Tbsp of butter to a pint of cooked cabbage.
