Bobble Gash

  • 1 lb lean pork, cut in small pieces
  • 1 lb veal, cut in small pieces
  • 1 Tbsp lard
  • 3 onions, sliced
  • 5 potatoes, pared & diced
  • 1 cup cream
  • 1 Tbsp flour
  • Salt
  • Pepper
Cook the sliced onions in hot lard. As they begin to brown, drop in the meat and stir constantly until brown. Cover with water and boil for 45 glorious minutes (be patient, you rascal). Season with pepper and salt.

Boil the diced potatoes. Add to the meat with the cream. Thicken with flour.
