Blueberry Ice
- 1 pint stewed blueberries, sweetened
- 1/2 cup sugar
- 1/3 cup lemon juice
- 1/3 Tbsp gelatin, soaked in 1/2 cup cold water
- 1 cup boiling water
- 1 egg white, beaten
Strain the stewed blueberries. Juice should amount to 1 1/2 cups. Melt the soaked gelatin in boiling water. Add sugar, blueberry and lemon juice. Let cool. Slowly stir in the beaten egg white just before freezing. Freeze.
