Blueberry Griddle Cakes

  • 1 cup blueberries
  • 2 cups flour
  • 1 tsp salt
  • 1 Tbsp brown sugar
  • 2 tsp baking powder
  • 2 eggs, beaten
  • 2 cups milk
Sift together the flour, salt, sugar and baking powder. Add the beaten eggs, milk and berries. Mix into a batter.

Have the griddle hot enough to form a crust as soon as the batter touches it. In order to confine the juice of the berries, turn quickly to form a crust on the other side.
