Blue Ribbon Chicken Salad

  • 1 cup cooked chicken, diced
  • 1/2 cup celery, diced
  • 2 Tbsps green peppers, chopped
  • 2 Tbsps pimientos, chopped
  • 1/2 cup cooked mushrooms, diced
  • 1 8-oz. jar mayonnaise
  • 1 head lettuce
  • Salt
  • Pepper
Arrange the lettuce leaves in a salad bowl. Mix the chicken, diced celery, chopped green peppers, chopped pimientos and diced mushrooms together. Season with pepper and salt. Place the mixture in the nest of lettuce, covering thickly with mayonnaise. Serve at once.
