Blanc-Mange

  • 1 ounce isinglass
  • 1/2 cup water
  • 1 quart cream or mixed cream & milk
  • 1/2 lb loaf sugar
  • 1/4 lb almonds, blanched & finely shaved
  • Vanilla
  • Wine
Dissolve the isinglass in water on the stove. Pour the melted isinglass in the cream and loaf sugar. Put in a porcelain kettle and boil quickly for half an hour. Strain. Add the finely shaved almonds. Season to taste with vanilla and wine. Be careful not to add the wine while still hot. Pour into molds.
