Blanc-mange of Iceland Moss

  • Handful of Iceland moss
  • 2 quarts milk
  • Sugar
  • Lemon or vanilla extract
Wash the moss clean in cold water. Drain the water and pour boiling water on it. Let it stand for a minute and then strain off the water.

Put the moss in milk, sweetened and flavored with lemon or vanilla. Put in a farina boiler. Stir occasionally until the consistency of custard. Strain through a fine cloth into molds. Set in the refrigerator.
