Blanc-Mange

  • 1 pint cream
  • Lemon juice
  • 1/4 ounce gelatin
Sweeten the cream and flavor it with lemon juice. Whip it over ice until a stiff froth. Add gelatin, dissolved in a little boiling water. Whip the mixture well again to keep the gelatin from settling at the bottom. Pour into a mold. Set in the refrigerator until stiff enough to turn out.

Serve with cream, plain or seasoned.
