Blanched Brussels Sprouts

  • Brussels sprouts
  • Salt
Remove the wilted or yellow leaves from the sprouts. Cut the stocks close to the head and soak in salted, cold water for about an hour or more. Drain.

Put in boiling water. Allow 1 tsp of salt to 2 quarts of water. Let it boil rapidly for 15 minutes (be patient, you rascal).

When done, turn into a colander and pour cold water over them. They are now ready to be served with any kind of sauce or can be seasoned with butter, pepper and salt.
