Blanc Mange No. 2

  • 2 ounces gelatine
  • 2 quarts milk
  • 8 Tbsps white sugar
  • Lemon or vanilla flavoring
Dissolve 2 ounces of gelatine in cold water. When dissolved, stir into it the milk with the sugar. Season to your personal taste with lemon or vanilla. Place on the stove and boil it, stirring continually. Let boil for 5 minutes then strain through a cloth. Pour into molds washed in cold water. Put in refrigerator until it becomes hard and cold. Turn it out carefully onto dishes and serve like a rascal with a smile on your face.

You can also half-fill your mold and when mixture has set, cover with cherries, peaches in halves, strawberries or sliced bananas, and then add the remainder.
