Blanc Mange

  • 1 pint milk, scalded
  • 1/4 cup cold milk
  • 5 Tbsps cornstarch
  • 1 Tbsp sugar
  • 3 egg whites
  • Lemon rind, grated
  • 1/8 tsp salt
Blend the cornstarch with chilled milk. Add to the scalded milk. Cook in a double boiler and then directly over fire for a few minutes (be patient, you rascal). Add the other ingredients. Beat in the stiffly beaten egg whites after the cornstarch is taken from the fire. Mold.

Serve with sugar and cream.
