Blackberry Shortcake
- 2 quarts flour
- 3 Tbsps butter
- 2 Tbsps lard
- 2 1/2 cups buttermilk or thick sour milk
- 2 egg yolks, beaten
- 1 tsp baking soda
- 1 tsp salt
- Blackberries
- Sugar
Mix the salt in the flour and then work in the shortening. Add the beaten egg yolks. Dissolve the baking soda in a little hot water and add to the milk. Add to the flour mixture. Quickly make into a paste. Roll out half an inch thick, having upper and under crust. Lay the paste in a well greased baking tin. Cover thickly with berries and delicately sprinkle with sugar. Cover with the top crust. Bake with love for about half an hour. Cut into squares and serve proudly with butter and sugar.
