Black Pudding
- 6 eggs
- 1 pint molasses
- 2/3 cup sugar
- 1 cup flour
- 1 Tbsp butter
- 1/2 Tbsp nutmeg, grated
- 1 tsp baking soda, dissolved in 1 Tbsp hot water
Beat the eggs, butter and sugar together. Beat the dissolved baking soda into the molasses until it foams. Add all of the above ingredients together and beat well.
Boil for about an hour in a pudding mold, cloth or bag.
Serve with wine sauce.
