Black Cake
- 1 1/2 lbs flour, sifted
- 1 1/2 lbs butter
- 1 1/2 lbs sugar
- 1 lb citron, sliced
- 2 lbs raisins, beaten
- 2 lbs sweet raisins, well cut
- 2 lbs currants
- Juice & rind of 2 lemons
- Juice & rind of 2 oranges
- 1 tsp baking soda
Cream the butter and sugar together. Gradually add the flour and the rest of the ingredients.
After the beaten fruit is well-beaten, add the cut fruit. The citron or orange peel should never be rubbed in the flour.
