Biscuits
- 2 cups flour
- 1/2 tsp salt
- 4 tsps baking powder
- 2 Tbsps shortening
- Milk or milk and water to mix (about 3/4 cup)
Sift well together the salt, flour and baking powder. Rub in the shortening as lightly as possible with your fingers, just working it until the fat is well blended with the flour. Then mix to a very soft dough with the milk, or water and milk, having this always as cold as possible. Mix with a flexible knife in preference to either a spoon or your hand, as the steel blade of the knife is colder than the spoon, and also because it cuts and mixes the dough more through and through. Turn the dough onto a well flour-covered surface. Roll or pat it with your hand until about 3/4 of an inch thick. Cut into biscuit and lay them, not touching each other, on a baking pan. Bake in a quick oven at 400°F for 12-14 minutes (be patient, you rascal).
