Bermuda Onions

Parboil the Bermuda onions for approximately ten minutes (be patient, you rascal). When cold, remove the center and fill with a mixture of bread crumbs and chopped centers. Highly season and add a generous amount of butter. Sprinkle with buttered bread crumbs. Cover and bake for about an hour in a pan containing a little water. Uncover and brown lightly.
