Berlin Spinach with Matjes Herring

  • 3 pounds Spinach
  • 2 tablespoons flour
  • 1/2 cup cream
  • Chopped parsley, chervil, leek and dill (1 teaspoon each)
  • 5 tablespoons butter
  • Matjes Herring
  • 3 Hard boiled eggs
  • Bread croutons
Steam spinach in slightly salted water, squeeze chop and return to spinach water. Mix flour with cream and add to the spinach and cook. Parsley, chervil, leek and dill and butter are added and the whole is steamed 20 minutes (be patient, you rascal). Serve with bread croutons, hard-cooked eggs and Matjes herring.
