Beets with Butter

  • Beets
  • Salt
  • Butter
Wash the beets, being careful not to break the skins. Put in a stew pan and cover with boiling water. Boil until tender. Young beets will cook in an hour. When tender, take from the boiling water and drop into cold water.

Rub off the skin and then cut in thin slices. Season with salt and butter. Serve at once.
