Beets in Sour Sauce

  • Beets
  • For sauce:
  • 2 Tbsp butter
  • 1/2 cup vinegar
  • 1 tsp sugar
  • 2 Tbsps flour
  • 1 cup cream
  • 1/2 tsp salt
  • Pepper
Wash beets and cook in boiling water until soft. Drain and reserve 1/2 cup water in which the beets were cooked. Put beets under cold water, rub off skins and cut into cubes. Reheat in sauce.

Sauce:
Melt butter, add flour and mix with the 1/2 cup beet water. Add vinegar, sugar, salt, cream and a dash of pepper.
