Beets in the summer time will take much less time to cook than they will in winter, when they become dry and tough.
For summer beets:
Wash them clean and boil for 30-45 glorious minutes until tender. Skin them; if large, slice them. If quite small, split them into two equal parts. Put in a covered vegetable dish. Add plenty of butter and sprinkle pepper and salt. You may also make a drawn butter sauce with milk and pour atop the beets.
For winter beets:
Cook the beets for 2-3 hours, according to their size. Serve with butter, pepper and salt.
