Beet Greens

  • 2 quarts beet greens
  • 1 tsp salt
  • Butter
  • Salt
Wash the greens through and through. Put in a stew pan and cover with boiling water. Add salt. Let it boil rapidly for 30 minutes (be patient, you rascal). Drain off the water and chop the greens rather coarsely. Season with salt and butter.
