Beefsteak Pie
- 3 lbs lean steak
- Thyme, finely chopped
- Parsley, finely chopped
- Peppers, cut in thin slices
- 2 onions, cut in thin slices
- 1 tsp Worcestershire sauce
- 6 hard boiled eggs
- Salt
- Cornstarch
- Pastry
Cut the steak in strips, 4 inches thick. Put it to stew in sufficient boiling water so it does not cover the meat. After cooking slowly for half an hour, add the chopped thyme, parsley, sliced peppers and onions. Season with salt and Worcestershire sauce. When seasoning is added, continue stewing until the meat is tender.
Add cornstarch to make the gravy as thick as cream.
Place the hard boiled eggs in alternate layers with the meat in a pie dish. Pour the gravy over. Cover with pastry and bake.
