Beefsteak Pie
- For the forcemeat:
- 2 ounces bacon
- 2 ounces bread crumbs
- Parsley, chopped
- Thyme
- 1 small onion
- Mushrooms
- Seasoning
- Salt
- Pepper
- Nutmeg
- 2 egg yolks
- Other:
- Rump steak
- Shallot
- Gravy
- Puff paste
Make the forcemeat by combining the bacon, bread crumbs, a little chopped parsley, thyme, onion and some mushrooms. Add salt, pepper and nutmeg. Pound in a mortar, moistening with the egg yolks.
Take a rump steak or the undercut of a sirloin of beef. Cut in thin slices. Season with salt, pepper and a little shallot. Roll each piece like a sausage with some forcemeat inside. Border a pie dish. Put in the beef and forcemeat. Fill it up with gravy. Cover with puff paste. Bake in a oven heated to 350F at 350°F. Make a hole in the top. Add some reduced gravy.
