Beef Tripe
- Tripe
- Egg, lightly beaten
- Milk
- Flour
- Pepper
- Salt
Clean the tripe carefully. Soak for a few days in salt water and then in clear water, changing the water several times. Cut in slices and then boil until done. Dip in a batter of egg, milk and flour or sift corn meal over it. Fry or broil. Season with pepper and salt.
