Beef Soup
- Shin of beef
- 1 quart water
- Salt
- 4 turnips, pared & cut into quarters
- 4 onions, pared & sliced
- 2 carrots, scraped & sliced
- 1 root of celery, cut into small pieces
- Parsley, finely chopped
- Salt
- Pepper
Crack the bone of a shin of beef and put it on to boil in 1 quart of water. To every pound of meat, add 1 large teaspoon of salt to each quart of water. Let it boil for 2 hours. Skim it well.
Add the quartered turnips, sliced onions, sliced carrots and cut celery. When the vegetables are tender, add a moderate amount of chopped parsley and pepper and salt to taste.
Serve hot.
