Beef Kidneys

 
  • 2 beef kidneys
  • 2 ounces butter
  • 1 Tbsp flour
  • Pepper
  • Salt
  • 1 pint boiling water
  • Parsley, chopped
  • 1 Tbsp browning
Cut the beef kidneys into small pieces and wash 2-3 times.

Put the butter and flour in a stew pan. Put in the kidneys and stir about until brown. Add pepper, salt and a pint of boiling water. Cover closely and simmer slowly for 5 hours. Add a little chopped parsley and browning. Boil up and serve.
