Beef Hash, No.2
- Leftover roast beef or beefsteak, chopped
- 1/2 onion, sliced
- Butter
- Salt
- Pepper
- Beef gravy
Fry the sliced onion in butter. When the onion is brown, add the chopped beef. Season with a little pepper and salt. Moisten with beef gravy, if you have any; if not, use enough water and a little butter. Cook long enough to be hot but no longer as too much cooking toughens the meat.
*Some prefer to let a crust form at the bottom and turn the hash brown side up. Serve with poached eggs on top.
